I know those hogs are pretty much vermin on your farm. So I don't know if you eat them or not. I've always wondered how they taste compared to domestic raised pigs.
No we eat grain fed domesticated hogs we slaughter and process ourselves. I won't eat those nasty bastards unless it was a piglet (Footballs). Gut the, boil them in a cast iron pot outside, scrape them and slow cook them whole on a smoker.
I love smoked pig. Nothing like a mesquite fire and slow roasted pork. I bet you fire roast the chilies and serve it with fresh salsa verde, beans and fried taters. Now I'm wishing I was in Texas again.
